I tell you what, the little misses sure comes up with some great lunch ideas for when we have to take short lunches and eat at work. This one is no exception.
Southwest style Chicken Quinoa Lettuce Wraps
The Stuff:
- about 1/2 a dozen Butter lettuce leaves
- Shredded Cheese
- Can of Corn drained
- Can of black beans strained and washed
- 1 cup of Quinoa cooked with chicken broth ( follow cooking instructions but use chicken broth instead of water)
- two chicken breasts cooked ( I recommend putting these in the crock pot when you go to bed with a can of Rotel and cook all night)
- Home made Greek yogurt ranch dressing (Greek yogurt, lemon juice, ranch packet)
The How: Note- before assembly make sure your chicken is cooked and your Quinoa is cooked.
- Heat your corn and beans in the microwave
- Wash your butter lettuce leaves and dry
- Get a plate and put the lettuce on it
- Layer ingredients:
- Quinoa
- beans and corn
- chicken
- Ranch Dressing
- shredded cheese
- Wrap
- Eat
- Repeat!
