Papa Ks Enchiladas
So First of all I am disappointed in the fact I didn’t get a final photo of these enchiladas. But let me assure you they were beautiful. We made them at home then took them to Laramie to have dinner with our oldest kid.
This is basically my Dad’s ( Papa K) recipe (his includes his love).
So Ingredients I used this will make 6 generously stuffed Enchiladas:
- 2 lbs Beef hamburger
- 1 small bag of frozen corn
- 1 can 16 oz black beans
- 2 packs of taco seasoning
- package of 10 inch Tortillas
- about half a small jar of Sadie’s Salsa “Not So Hot” version
- 1 32 ounce can of red Enchilada sauce, We used Las Palmas red Enchilada Sauce
- 1 2 cup bag of Shredded cheddar cheese
What to do:
- Brown up the hamburger according to the direction on the back of the taco seasoning packet. Cook as directed, Till it is done.
- Open, Strain and rinse Black beans.
- Add to the taco meet mixture
- Add about 3/4 of a small bag of frozen corn to taco meet mixture
- Add about 1/2 a small jar of Saidie’s Salsa to mixture
- Mix all together thoroughly
- Get a 9 x 13 glass baking dish and spray with cooking spray
Stuffing
- Pre-heat oven to 350 Degrees
- Get your tortillas out ( about 6 per glass dish)
- Put generous stuffing on tortilla
- Sprinkle Shredded cheese over mixture
- Roll the enchilada and place in pan.
- Repeat till dish is full. ( again about 6)
Spread rest of the taco meat mixture over the rolled enchiladas
Pour sauce over the enchiladas, and then cover with shredded cheese.
Back for approx 35 in in the oven, Server and Enjoy!!!
